3 Phases: Visual, Olfactory, and Gustatory

Ready to dive into the fascinating world of wine tasting? Get ready to unleash your senses and embark on an unparalleled sensory journey.

This experience is divided into three phases that will test your senses: visual, olfactory, and gustatory, always performed in this order. A simple way to remember it is by thinking of the position of the eyes (1st), nose (2nd), and mouth (3rd)—from top to bottom. From the hypnotic sparkle in the glass to the captivating aromas and flavors that will delight your palate, each stage uncovers hidden secrets with every sip. Get ready to enjoy a truly unique wine adventure!

We recommend using fine crystal glasses and serving a moderate amount of wine to better appreciate all its characteristics. Red wines should be served at about 16°C, while white and rosé wines should be chilled to around 6–7°C.

The Visual Phase

The visual phase of wine tasting is the moment when the wine presents itself to our eyes, revealing its personality through subtle nuances and tones. As we hold the glass, its elegant shape invites us to carefully observe every detail.

The first visual encounter allows us to appreciate the wine’s color. From an intense ruby red to a brilliant golden hue, each shade holds a unique story. We’ll examine the intensity of the color, its clarity and transparency, as well as its body and structure as it glides along the glass’s walls. As we gently swirl the wine, the tears it forms reveal its consistency and density.

Brighter and more vibrant colors suggest fresh and lively wines, while darker and opaquer tones indicate maturity and concentration. The spectrum of colors is endless, ranging from pale pinks to deep blues or purples. In red wines, colors transitioning from violet to a brick hue signal wines with extended aging. Initially, when the glass is still, we often detect the wine’s aromatic intensity and primary aromas—mainly fruity scents derived from the grape itself. Upon swirling the glass gently, secondary aromas emerge, revealing the spices and notes associated with the wine’s aging process.

If you can’t identify these scents immediately, don’t give up! Often, the challenge lies in our memory; we can detect the aromas but struggle to articulate what they remind us of. On first contact, we notice how the wine enters the mouth—whether it feels broad or narrow, robust, or subtle. The renowned tannins of wine may caress our tongue with smoothness or impart a slight astringent touch, leaving a dry sensation in the mouth.

At Bodegas Enrique Mendoza, we offer you the chance to enjoy a unique wine-tasting experience, the grand finale of our Gold Experience, During this journey, you’ll not only explore our facilities and winemaking process but also immerse yourself in our philosophy of life: we live for and by wine. The experience is divided into two distinct parts, expertly guided by one of our outstanding professionals.

First, you’ll embark on a guided tour of our facilities. This begins with our experimental pruning field, followed by the climate-controlled product storage area, the bottling room, and finally, our underground cellar filled with American and French oak barrels that impart unique characteristics to our wines.

The second part consists of a unique tasting experience in our beautifully landscaped garden area. Under a charming Riu-Rau typical of the region, you’ll take part in an enjoyable, engaging, and educational tasting session. Here, you’ll have the opportunity to sample seven of our finest wines, providing a comprehensive journey that will give you insight into our philosophy of winemaking:
